In my household I love chicken. In fact it is my top choice of meat. Why not try ground chicken in your next recipe. In terms of calories and total fat, ground chicken is similar to extra-lean ground beef, however it is a little lower in saturated fat. Italian chicken meatloaf is a delicious spin of an old time classic.
I had my Italian chicken meatloaf whipped up in no time. If you would like to try your hand at the Italian chicken meatloaf, you can find the recipe below.
Italian chicken meatloaf
Serving Size: 8
Ingredients:
2 lbs. ground chicken
1/2 cup Kraft Italian Dressing
6 slices of bread ( you can substitute bread for rolled oats, but may need to use a few more rolled oats.)
3 large eggs, slightly beaten
2 packages of onion soup mix
Tablespoon of Epicure Garlic Dill or whatever seasoning you like.
1/4 cup of spinach finally chopped
1/2 cup Mann’s Rainbow Salad
1/2 cup shredded part-skim mozzarella cheese (about 2 oz.)
Directions:
Preheat oven to 350°.
Combine all ingredients except the 1/2 cup cheese in large bowl. Spray loaf pan with olive oil. Shape into loaf in 13 x 9-inch baking pan. Bake 60 minutes or until done. Sprinkle with cheese. Let stand 10 minutes before serving.
Serve with rice, salad or a pasta. The Italian chicken meatloaf also makes a great next day left over. You can eat it hot or cold. Let me know if you try the recipe.
